4 tablespoons of sunflower oil
1 onion
2 carrots
1 red bell pepper
1 celery stalk
1 zucchini
2 spring onions
1 teaspoon of salt
1 teaspoon of black pepper
6 glasses of water

For the dressing:

1/2 cup of yogurt
2 tablespoons of flour
1 teaspoon of salt
1 egg yolk
3-4 drops of lemon

Preparation of:

Heat 4 tablespoons of sunflower oil in a pan. Add 1 chopped onion on it and fry it until soft. Add 2 diced carrots, 1 bell pepper, 1 celery stalk, 1 zucchini and 2 chopped spring onions with 1 minute intervals and continue frying. Then add 1 teaspoon of salt, 1 teaspoon of black pepper and 6 glasses of water to the pot and mix. Close the lid and let it boil. While the soup is starting to boil, whisk 2 tablespoons of flour, 1 teaspoon of salt, 1 egg yolk and 3-4 drops of lemon in a bowl to which you add half a glass of yogurt for the seasoning until it gets a smooth consistency. Take a ladle of the boiling soup water on it, pour it slowly and equalize the heat. Lower the boiling soup and gradually add the seasoning mix to the soup pot. Cook for another 10 minutes on low heat and serve hot. Enjoy your meal!
