Ingredients for Lettuce Salad with Cashew Nuts and Soy Sauce
- 1 small atom salad
- 2 cups shredded red cabbage
- 1.5 cups grated carrots
- 1 red bell pepper (Chopped)
- 1/2 bunch coriander (Chopped)
- 1/2 cup spring onions (Chopped)
- 3/4 cup salted cashews (roasted)
- 1/2 cup almonds (roasted)
for the sauce
- 2 tablespoons of toasted sesame oil
- 2 tablespoons of olive oil
- 2 tablespoons of low salt soy sauce
- 2-3 tablespoons of rice vinegar
- 1.5 tablespoons of maple syrup or honey
- 2 cloves of garlic (finely chopped)
- 1 tablespoon fresh ginger (Chopped)
For the above
- Extra cashews and almonds
- Green Onion (Finely Chopped)
- Coriander (finely chopped)
How to Make Lettuce Salad with Cashew Nuts and Soy Sauce?
- Wash the leaves of the atom salad and drain well. Dry with a paper towel and chop finely. Transfer to a deep bowl and add and mix the other ingredients respectively.
- Whisk the ingredients for the sauce in a small bowl. If you want a thicker creamy sauce, add a tablespoon of tahini or cashew oil.
- Pour the dressing over the salad and mix the salad using tongs. Serve garnished with roasted cashews, almonds, green onions and coriander leaves.
