Ingredients for Leek Cheese Pie Recipe

  • 500 g diced chicken breast meat
  • 2 stalks of leek (Sliced)
  • 1 tablespoon of olive oil
  • 1 tablespoon of butter
  • 1 onion (Chopped)
  • 3 cloves of garlic (Sliced)
  • 2 tablespoons of flour
  • 450 ml chicken stock
  • 200 ml cream
  • 2 teaspoons English mustard
  • Salt
  • Black pepper
  • 100 g prunes (cut into 2)
  • 150 g aged cheddar cheese (Crumbled or hard white cheese)
  • 4-5 sprigs of fresh tarragon grass (finely chopped)
  • 4-5 sprigs of parsley (finely chopped)
  • 450 g puff pastry
  • 1 egg yolk
  • 1 tablespoon of cream

How to Make Leek Cheese Pie?

  • Heat the olive oil and butter in a medium saucepan. Add the onion and garlic and fry until they turn pink.
  • Then add the chicken and continue frying. Add the leek slices and the flour, turn it a few times and add the chicken broth, then mix and cook. When the consistency thickens, add the cream and mustard, mix and remove from the stove. Mix in the prunes, grated cheese and fresh herbs.
  • Grease and lightly flour a medium sized baking dish. Unroll half of the puff pastry and place in the baking dish.
  • Pierce the base with a fork and transfer the leek mixture you have prepared. Roll out the other half of the puff pastry to the size of the bowl and make a hole in it with a small mold and cover the baking dish.
  • Beat the egg yolk and cream in a bowl and brush over the pie with a brush.
  • Bake in a preheated oven at 180 degrees for 25-30 minutes until golden brown. Remove from the oven, let it rest for 5-10 minutes and serve.
